If you want to smoke delicious and tasty bacon on your own, the process is pretty straightforward. You may have one or two challenges as a newbie to BBQ smoking. But this should not deter you. In the end, your efforts will be rewarded when your bacon tastes great. The following is an easy guide to follow when making bacon with a Masterbuilt or Cookshack Bradley electric smoker.

Select the right pork belly.

If you really want to cure and smoke your own bacon yourself, it’s important to choose the pork belly that will produce the right result.

Remove the skin

The skin of the pork belly (known as the rind), is usually tougher than other areas of the bacon. Apart from this, it also prevents smoke flavors from penetrating the bacon. So you need to remove this section.  But don’t throw the skin away. You can make pork cracklings when you fry it in oil.  Alternatively, you can use it to make brownies by smoking it over a medium flame until golden brown and crisp.

Prepare the cure

The cure for bacon does not require too many ingredients. You only need pepper, sugar, and salt. Rub the mixture on the pork belly and place in a plastic bag. After curing the bacon for 3 days, the meat will gradually start looking like brine. This is when your bacon is ready to be smoked.

Smoking the bacon

Preheat your electric smoker up to 1750F. In a charcoal smoker, the temperature will fluctuate between 165 and 180 degrees. But since you’re using an electric smoker, the meat will have a relatively stable temperature. The best electric smoker will keep the temperature stable until the bacon is fully smoked.

Add your preferred woodchips (cherry, apple, or hickory can serve here).  Then allow the smoker to do its job. Your crisp and tasty bacon should be ready within 2 – 3 hours.
